RASPBERRY PROTEIN HEARTS

Here’s a Valentine’s Day treat you can indulge in guilt-free!! 😉

Ontario is on lockdown so I’ve been experimenting in the kitchen more and trying new recipes. Since Valentine’s Day is just around the corner, I thought of turning my regular protein balls into hearts and adding raspberries to give them the perfect shade of pink! These little snacks are fun to make with the kids, delicious and packed with protein.

Ingredients

  • 1 cup frozen raspberries
  • 1 1/2 cup rolled oats
  • 1/2 cup protein powder
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1 tbsp chia seeds
  • 2/3 cup shredded coconut

INSTRUCTIONS

  1. Place the raspberries, oats, protein powder, maple syrup, coconut oil, chia seeds and 1/2 cup of the shredded coconut in a food processor. Blend until smooth.

2. Transfer into a big bowl and place in the fridge for a few hours to let the mixture thicken.

3. Use a heart shape cookie cutter to form the mixture into hearts. I found my cookie cutter at Dollarama.

4. Dip the outside edge of the heart into the remaining shredded coconut. Store in an airtight container in the fridge for up to 2 weeks.
